Chicken and Bok Choy Stir Fry

The chicken breast is cut into bite-sized pieces. then perfectly sauteed in a sweet and tangy sauce, and combined with fresh bok choy. A simple dinner can be served with steamed rice or mixed greens.

This is the fourth dish I made out of the whole chicken I butchered that I bought for only $7.99. This is a very simple dish, ideal during busy weeknights, and if you’re meal prepping, you’re going to love adding this dish to your menu. The ingredients are mostly what you already have in your pantry or fridge. You can substitute bok choy for broccoli, cauliflower, cabbage, or any green leafy vegetables. You can serve it with steamed rice which is very filling and a little goes a long way (another way to budget for your grocery shopping). 

The time and work you spend planning and prepping your meals are all worth the effort. Not only you’re saving time and money but your eating well also. This means less waste because you’re only buying what you need, and it will save you time because you’re not stressing thinking about what’s for dinner. It’s all planned and that’s the secret to success when it comes to meal prepping. 

what you need to make it

Oil – use a high smoke point oil like vegetable oil, canola oil, or avocado oil. 

Chicken – is boneless, skinless, and cut into bite-sized pieces

Aromatics – minced garlic is a natural food enhancer that is jam-packed with an earthy flavor

Sauces – oyster sauce and soy sauce. These sauces give your dish a boost of flavor, and lots of umami, and are very savory.

Honey – balances the sweet and tangy flavor that makes the dish very flavorful. 

Rice vinegar – adds tangy flavor to your dish

Bok choy – is a green leafy vegetable that is packed with vitamins. It’s delicious and good for you!

Sesame oil and sesame seeds – give your dish a nice nutty finish

Chicken and Bok Choy Stir Fry

Equipment

  • Wok or wide pan
  • knife
  • cutting board
  • Wooden spoon or spatula

Ingredients
  

  • 3 tablespoons oil
  • 1 pound skinless, boneless, chicken breast bite-sized pieces
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cups roughly chopped bok choy
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Instructions
 

  • Heat a wok or wide pan with oil. Add the chicken, and cook until browned. Then push on one side of the pan.
  • Add the garlic and saute for a minute. Add soy sauce, oyster sauce, honey, and rice vinegar. Stir to combine, and simmer until the sauce thickened.
  • Add the bok choy, sesame oil, and sesame seeds. Stir to combine, and cook until the bok choy are slightly wilted. Serve with steamed rice.
