One Pan Chicken Fajita

what you need to make it

FOR THE CHICKEN FAJITA

  • Chicken Strips – you can buy the skinless boneless chicken breast and cut them into strips
  • Bell Pepper – you can get mixed colored pepper. The colorful the food the better.
  • Yellow Onion – when the onion is roasted, it releases sugar and caramelized which gives the best flavor.
  • Cauliflower – is a great addition to get more veggies into your dish. 
  • Oil – adding oil is essential when roasting anything. It gives your dish a nice golden brown color. 

FOR THE SPICES

  • They are smoked paprika, chili powder, dried oregano, cumin, garlic powder, salt, and red chili pepper flakes. This blend of spices gives the fajita a boost of southern flavor. You can also use this combination of spices for your taco, and any type of veggies you would like to roast.

This Chicken Fajita is part of that whole chicken that I cut into pieces and made 4 dishes out of that one whole chicken. I bought it on sale for only $7.99 and I made a Homemade Chicken Broth, Chicken and Bok Choy Stir-fry, Chicken Cacciatore, and this Chicken Fajita. I used what I have available in my pantry and fridge and then came up with all these dishes. The ingredients are pretty simple and I’m sure most of them are already in your pantry.

One Pan Chicken Fajita

Easy chicken fajita seasoned with a blend of spices. Combined with perfectly roasted veggies.

Equipment

  • A bowl to mix the spices

Ingredients
  

  • 1 pound skinless, boneless, chicken breast, cut into strips
  • 1 bell pepper, seeds removed and cut into strips
  • 1 onion, sliced
  • 2 cups cauliflower florets
  • 3 tablespoons olive oil

FOR THE SPICES

  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon red chili pepper flakes

Instructions
 

  • Preheat the oven to 400ºF. Line a baking sheet pan with parchment paper
  • Place chicken, bell pepper, onion, and cauliflower in a single layer onto the prepared baking sheet pan.
  • Combine all the spices. Drizzle oil over the chicken and veggies. Sprinkle the blend of spices and toss to coat well.
  • Bake for 20-30 minutes or until the chicken reaches the internal temperature of 165ºF and the veggies are tender.
  • Make a Fijata bowl and add avocado, corn, rice, and squeeze lime juice. Or serve it with tortillas.
