what to love about watermelon
Watermelon is a delicious, thirst-quenching fruit that many people love. They enjoy the natural sweetness and high vitamin content of this fruit. It’s not only good for making salads but I love making Watermelon Popsicles also, it’s fun and delicious. You can add them to your smoothies, fruit punch, sorbet or ice cream, and you can also make a fruit bowl by carving out the flesh with a scoop or melon baller.
Ingredients and substitutions
The cherry tomatoes and mint leaves were harvested from my garden.
FOR THE SALAD:
- Watermelon
- Mango
- Cucumber
- Sweet cherry tomatoes
- Red onion
- Mint leave
- Feta cheese
Watermelon is a must but you can have peaches instead of mango. You can add berries, avocado, and cilantro. You can leave out the cucumber if you like. Any Summer fruit will work. You can add any cheese you like. Cheddar or fresh Mozzarella is good.
FOR THE BALSAMIC GLAZE:
- Balsamic vinegar
- Brown sugar
You can use honey or maple syrup instead of brown sugar.

how to make the watermelon and mango salad
- Wash the watermelon. Cut in half, cut again into quarters. Slice the flesh into a triangular shape. Then, cut into strips, then cut again into cubes or bite-sized pieces. Set them aside.
- Dice the cucumber. I used seedless English cucumber. Cut in half, then cut into strips, then diced.
- Wash and peel the mango. Slice the flesh around the pit. Cut into wedges, then cut them again into bite-sized pieces.
- Pick sweet cherry tomatoes. Wash and cut them in halves.
- Rough chop the mint leaves. And garnish the salad with them.
- Make the balsamic glaze. In a saucepan add the balsamic vinegar and brown sugar. Turn the heat to medium-low. Stir to mix, continue stirring, and simmer for two minutes or until it bubbles and the sugar dissolves. Cook the vinegar until it reduces in volume and is slightly thickened but not caramelized. The consistency should still be thin and runny.
- Plate the salad. Place the cut-up fruits and onion on a platter. Sprinkle the feta cheese and garnish it with mint leaves. Lastly, drizzle the balsamic glaze. Toss to coat well.

Watermelon and Mango Salad

Ingredients
- 2 cups watermelon, bite sized pieces
- 1 cup diced cucumber
- 1 mango, diced
- 1 cup sweet cherry tomatoes, halves
- 1/2 cup roughly chopped mint leaves
- 1./4 cup balsamic vinegar
- 1 tablespoon brown sugar
- 1/4 cup chopped red onion
- 1/4 cup feta cheese
Instructions
- Prep and cut up all fruits and red onion.
- Make the balsamic glaze. In a saucepan, add the balsamic vinegar and brown sugar. Turn the stovetop to medium-low. Stir to combine. Continue stirring until the sugar dissolves.
- Simmer for 1-2 minutes or until slightly thickened. Do not overcook.
- Sprinkle the feta cheese over the salad. Garnish with mint leaves and drizzle the balsamic glaze. Toss to coat well.
