Three Easy Dinner Recipes

Be ready when someone asks the age-old question “what’s for dinner”? Here’s a complete meal that can be done in a short amount of time. I’m sharing three quick and easy recipes: Grilled Chicken Drumsticks, Grilled Asparagus, and Roasted Potatoes.

what’s for dinner?

Busy, busy, busy, I know exactly how it feels. Not everyone is excited to cook dinner, especially after a long day of work. When it comes to cooking dinner, we want quick, simple, but flavorful. These three dinner recipes I’m about to share with you are my go-to when times are hectic and I have deadline to meet. The Korean BBQ Grilled Chicken is packed with flavors and you can make them ahead of time. The outdoor bbq is nice but sometimes you don’t want to do the extra work of setting up the grill outside. My indoor grill pan also gives me the best result when it comes to grilling meat. 

Grilled veggies are an amazing way to incorporate more vegetables into your meals. This Grilled Asparagus recipe is so easy to make. My daughter can’t stop eating them, and it never fails, she always asks, how did you make it so flavorful? Just a sprinkle of garlic powder, and a drizzle of oil, salt, and pepper, do the magic. Oh and don’t forget the freshly squeezed lemon juice – it makes a big difference. 

Roasted Potatoes are the best side dish for any grilled meat – in my opinion. Potatoes are very versatile, you cannot go wrong buying a ten-pound bag of them. For me, roasting is the best way to have them. You can also add them to your stew, make French fries, or make some kind of loaded potatoes. 

Grilled Chicken

I love grilling dark meat, especially chicken thighs and drumsticks. They are affordable and render so much flavor. I used drumsticks for this Korean Grilled BBQ Chicken. My secret to getting the most flavor is cutting slits on all sides to soak in the marinade and to get those amazing flavors not only outside the meat but all through the bones. Of course, marinating them overnight also does the trick.

In my opinion, grilling the vegetables is the best way to have them. It’s also an amazing side dish to any meat dish. I try to incorporate more vegetables into our meals and Grilled Asparagus is one of my favorite veggies when it comes to simple and quick cooking. Any vegetable when overcooked loses its bright color and nutrients. I love asparagus because it only takes very little time to cook.

roasted potatoes

Potatoes are not always the first choice for many people but for me, it’s great with anything. I always buy a 5 or 10-pound bag of potatoes. My daughter loves them baked, roasted or fried. She loves them for breakfast. She makes the best hashbrowns with bacon and sundried tomatoes.
