Watermelon and Mango Salad

A refreshing salad with balsamic glaze for dressing. Sprinkled with feta cheese and garnish with roughly chopped mint leaves.

Ingredients
  

  • 2 cups watermelon, bite sized pieces
  • 1 cup diced cucumber
  • 1 mango, diced
  • 1 cup sweet cherry tomatoes, halves
  • 1/2 cup roughly chopped mint leaves
  • 1./4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1/4 cup chopped red onion
  • 1/4 cup feta cheese

Instructions
 

  • Prep and cut up all fruits and red onion.
  • Make the balsamic glaze. In a saucepan, add the balsamic vinegar and brown sugar. Turn the stovetop to medium-low. Stir to combine. Continue stirring until the sugar dissolves.
  • Simmer for 1-2 minutes or until slightly thickened. Do not overcook.
  • Sprinkle the feta cheese over the salad. Garnish with mint leaves and drizzle the balsamic glaze. Toss to coat well.
