Tuxedo Overnight Chia Seeds

You know I love overnight chia seeds! I can have it 3 times a day and I won’t get tired of it. Let alone combine with dark chocolate, Ay Yay Yay mama mia I’m in total heaven! Ok, let’s get to the health side of it. Chia seeds are a superfood, they’re originally grown in Mexico which was the staple in Mayan and Aztec diets for centuries. It’s high in nutrients, great for boosting energy and easily digested. It contains omega-3 fatty acids and is rich in polyunsaturated fats. High in fiber and antioxidants, it can fill you up easily and very satisfying one reason to eat more chia seeds when you’re trying to shed unwanted weight.

Now let’s talk about dark chocolate, oh no don’t let me start!

Dark chocolate is filled with health benefits such as flavonoids, which maintains cardiovascular health and lowers the risk of cancer. Dark chocolate also contains antioxidants which are essential for a strong immune system. If you eat dark chocolate before having lunch or dinner, you would definitely eat far less. The chemicals in the chocolate trigger the hormones in your body that make you feel full and you eat less as a result.

I love to make anything with dark chocolate, from energy bites, energy bars and even oats and gluten free pancakes.

So, let’s start whipping some chia seeds with dark chocolate!

 

  

 

Recipe

You can use almond milk instead of coconut milk if you like. 

 

Ingredients
  

  • 1 cup coconut milk
  • 3 tablespoons chia seeds
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon dark chocolate shavings or nibs
  • 2 tablespoons pure maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon unsweetened coconut flakes
  • 1/2 teaspoon vanilla

Instructions
 

  • Place the chia seeds, vanilla, cinnamon and coconut milk in an airtight container, stir to mix well. Cover and refrigerate overnight. 
  • When ready to assemble, place the cocoa powder and maple syrup in a bowl. Use a whisk and continuously whisk them until the cocoa powder is completely dissolved. It should have a liquid consistency like chocolate syrup. 
  • Assemble the chia seed mixture and chocolate syrup in a glass. Scoop about 2 tablespoons chia seed mixture first into the bottom of the glass, drizzle about a teaspoon of chocolate syrup for the second layer. Continue layering them until you reach the top of the glass. Sprinkle coconut flakes and chocolate shavings for toppings.
