Place the chia seeds, vanilla, cinnamon and coconut milk in an airtight container, stir to mix well. Cover and refrigerate overnight.
When ready to assemble, place the cocoa powder and maple syrup in a bowl. Use a whisk and continuously whisk them until the cocoa powder is completely dissolved. It should have a liquid consistency like chocolate syrup.
Assemble the chia seed mixture and chocolate syrup in a glass. Scoop about 2 tablespoons chia seed mixture first into the bottom of the glass, drizzle about a teaspoon of chocolate syrup for the second layer. Continue layering them until you reach the top of the glass. Sprinkle coconut flakes and chocolate shavings for toppings.
