Cabbage and Tomato Stew

Rushing to get dinner done? No worries I got you covered today. This easy recipe is going to be the family’s fave. I used a ready canned tomato sauce, but I made sure there’s no sugar or artificial flavorings in it. Remember, clean eating is not a strict diet, we all have busy lives, so minimally processed foods sometimes is the best choice we have. This is why it’s important to read the label and get yourself familiar with the right ingredients.

It is about making the best choices to empower ourselves. Don’t beat up yourself if you mess up one day – you can always get back on track the following day and just make the most of what you can. Clean eating is not a standard way of eating based on somebody else’s needs. It’s not defined by anybody but yourself.

Recipe

Ingredients
  

  • 1 small cabbage, shredded
  • 1 4oz. tomato sauce, no sugar added
  • 1 onion chopped
  • 2 celery stalks chopped
  • 2 tomatoes diced
  • 2 tablespoon olive oil
  • 4 garlic cloves minced
  • a handful of cilantro, for garnish
  • salt and pepper to taste

Instructions
 

  • Heat a stock pan with oil. Saute garlic and onion, stir until tender. Add tomatoes, and celery, stir to mix well. 
  • Add the cabbage and tomato sauce, season with salt and pepper. Stir, lower the heat, cover and simmer for 5 minutes or until the cabbage is tender. Remove from the heat, garnish with cilantro. Serve with brown rice. 
  • Option: you may add boiled eggs on top for extra protein.
