Heat a stock pan with oil. Saute garlic and onion, stir until tender. Add tomatoes, and celery, stir to mix well.
Add the cabbage and tomato sauce, season with salt and pepper. Stir, lower the heat, cover and simmer for 5 minutes or until the cabbage is tender. Remove from the heat, garnish with cilantro. Serve with brown rice.
Option: you may add boiled eggs on top for extra protein.
