What can be worst than eating tough and rubbery stir-fry meat? Discover how to make your beef super tender with easy and delicious teriyaki sauce. The glass noodles are ideal for stir-frying because it soaks up the flavor so well.

the secret to making tender beef stir-fry

The last thing you want is to bite into a tough and rubbery piece of cooked beef. Choose any tender cut beef, it could be, sirloin, ribeye, round, or flank steak. For stir-frying, slice the beef into 1/4 inch thick, the thinner the slice the faster it cooks. Try to cut your beef against the grain – if the grain is going horizontal then you’ll cut your meat vertically. The more marbling you see on the beef the more flavor it has. 

There are 3 qualities of tender cut beef:

  • PRIME –  is the highest quality and the most expensive
  • CHOICE  and SELECT – Choice is the second to the highest which is the middle quality and Select is the inexpensive and less quality. When stir-frying, try to get at least the middle class, like sirloin or ribeye. 

To help tenderize the meat – I add a little bit of cornstarch and baking soda plus some kind of acid like rice vinegar or apple cider vinegar. The combination of acid and baking soda neutralizes the protein and helps tenderize the meat. The cornstarch adds a glossy finish to the beef.

Teriyaki Beef and Noodle Stir-Fry

Glossy and super tender stir-fry beef with glass noodles. Easy to make and delicious teriyaki sauce with bell pepper and spring onions.

Ingredients
  

  • 4 oz. or half a package of glass noodles, soaked, softened
  • 1 bell pepper, deseed, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 inch sized fresh ginger or a teaspoon, minced
  • 4 stalks of green onions, sliced
  • 1 pound tender cut beef or sirloin, thinly sliced
  • 3 tablespoons oil

MARINADE

  • 1 tablespoon light soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda

TERIYAKI SAUCE

  • 2 tablespoons light soy sauce
  • 3 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil

Instructions
 

  • In a bowl, add the noodles and 2 cups of water or until the noodles are all covered. Soak for 15 minutes. When the noodles softened, use the kitchen sears and cut the noodles into shorter strands.
  • Meantime, in a bowl, add the beef slices and all the marinade ingredients. Toss to coat well, and marinate for 5-10 minutes.
  • Heat a wok or wide pan with oil. I use a wooden spoon to test my oil if it's hot enough. Dip the spoon into the oil, if you see bubbles forming at the tip of a spoon, it means the oil is ready.
  • Add the marinated beef into the pan, and cook for 2 minutes on each side or until browned and well seared. Remove from the pan and set them aside.
  • Use the same pan, add more oil if the pan is drying. Add the onion, and saute until tender. Add the garlic and ginger, and continue sauteing until fragrant.
  • Add the bell pepper, and cook until tender. Add the cooked beef and the teriyaki sauce into the pan, and stir to combine. Add the softened noodles, and continue stirring until coated with the sauce.
  • To finish, sprinkle green onions and sesame seeds on top. Serve immediately.
