Overnight Chia Seeds with Bananas and Sweet Potatoes

Eating breakfast is very important. I know how busy life can be sometimes but fueling our body with healthy breakfast will give us the energy we need for the whole day. Cereal is easy to have but it’s loaded with sugar that will give us the sugar crash later and it will also make us grab unhealthy foods. The more we eat sugary foods the more our body wants it.

We can certainly satisfy our sweet tooth by eating whole natural fruits. In this recipe – the banana and sweet potato add so much flavor to the overnight chia seeds. You can certainly add a little bit of pure maple syrup and maybe some nuts to add a crunch.

Ingredients
  

  • 1 15oz. coconut milk or coconut cream
  • 1 ripe plantain sliced
  • 1 small sweet potato peeled and sliced
  • 1 teaspoon cinnamon
  • 3 tablespoons chia seeds
  • 4 tablespoons coconut oil

Instructions
 

  • Combine chia seeds, coconut milk, and cinnamon, stir to mix well. Cover tightly and refrigerate overnight. 
  • Heat a pan with oil, fry the banana and sweet potato. Brown each side, cool and cut into smaller chunks. Add to your overnight chia seeds.
