No Bake Vegan Fruit Tart

Sweet tooth calling your name? No problem, this recipe will satisfy your sweet cravings. It’s a perfect Summer recipe for your special gatherings, no need to heat the oven. Refreshing fruits and a tasty crust made from nuts and dates are an amazing way to calm those nagging sweet tooth.

Ingredients
  

  • FOR THE CRUST:
  • 1 cup dates
  • 1/2 cup roasted cashews
  • 1/2 cup roasted almonds
  • ..
  • FOR THE FILLING:
  • 1 ripe mangos
  • 1/2 cup pineapple
  • 1 cup coconut cream
  • 5 tablespoons Kuzu
  • 4 tablespoons cold almond milk
  • 2 cups of your favorite cut up fruits for toppings

    FOR THE CRUST

      Instructions
       

      • In a food processor, add the nuts, process until finely chopped.
      • Add the dates, process until it becomes sticky consistency. Transfer the mixture to a 7" pie pan. Press the pie crust mixture to cover the whole pie pan. Evenly smooth the sides. 
      • Set aside.

        FOR THE FILLING

        • In a blender, add the coconut cream, pineapple, and mango. Blend until smooth.
        • In a small bowl, combine the Kuzu and almond milk, stir until the Kuzu dissolved. Add to the blended fruits, stir to combine well. 
        • Pour the blended fruits into the prepared pie crust. Place in the freezer for one hour. 
        • Remove from the freezer, top with fresh cut up fruits. Place in the refrigerator for half an hour to thaw. Cut and serve. Place the leftover back to the freezer and when ready to eat place in the fridge to thaw out.
