Banana Coco Rama
I will never get tired of plantain. It’s my number one go to when I’m going bananas for something sweet. Plantains are cousins of regular bananas, they are typically cooked before eating. They’re high in potassium, lower in sugar than a regular banana but much starchier and it is being used more often as an ingredient. Plantain has lots of health benefits. So next time you’re in the store, grab those plantains to support your overall health. I love frying them in coconut oil to have for breakfast and add them to my oats for a hint of sweetness.
Let’s fry ’em plantains!
Ingredients
- 2 medium ripe plantains, peeled, sliced
- 2 tablespoons coconut oil
- 1 tablespoon unsweetened coconut flakes
- 1 teaspoon cinnamon
- 2 teaspoons coconut palm sugar
- a handful of berries, optional
Instructions
- Heat a pan with oil. Add the plantains (do not crowd the pan), cook each side for a minute or until golden brown.
- Place the cooked plantains on a plate with paper towel to drain the excess oil. On a plate, the sugar and cinnamon. Dredge the plantains in the cinnamon sugar, sprinkle with coconut flakes. Serve with berries.
