Green Goddess Salad

If you’re looking for a quick, easy lunch – this recipe is for you. The earthy green taste of kale is a perfect pair with sweet apple, pear, green grapes and my favorite fruit of all times “the fig”.

Figs belong to the mulberry family, they’re high in fiber, a good source of essential minerals, including magnesium, calcium, copper, and potassium. I love love this sweet gorgeous fruit!

Recipe

 

Ingredients
  

  • 1 bunch kale, trimmed and rib removed
  • 4 romaine leaves, shredded
  • 4 figs, sliced
  • 1/2 cup green grapes, halved
  • 1 green or delicious apple, thinly sliced
  • 1 pear, thinly sliced
  • 1 small cucumber, thinly sliced

Instructions
 

  • Combine all ingredients, pour the ranch dressing, stir, toss to coat. Top with feta cheese. 

Recipe for the ranch dressing

 

Ingredients
  

  • 1 cup Greek Yogurt
  • 1/2 cup fresh Parmesan cheese
  • 1 clove of garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill, you can also use fresh
  • 2 tablespoons olive oil
  • 2 tablespoons almond milk, if you want thinner consistency

Instructions
 

  • Place everything in a food processor, process until smooth.
