Red Potato Salad

What’s for lunch? Well, I got you, my friend. Here’s the Red Potato Salad, very filling, clean and very flavorful. Red potatoes have a thin skin filled with nutrients, which are loaded with fiber, B vitamins, iron, and potassium. Half of the fiber of a potato comes from the skin, so you can certainly leave the skin on.

Ingredients
  

  • 8 small red potatoes, peeled cut into pieces
  • 1 small red onion, chopped
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • a handful of cilantro, chopped

Instructions
 

  • Fill a stock pot with water half way, add the potatoes. Boil the potatoes until tender. Remove from the heat. Drain and set aside until you're ready to build your salad. 
  • FOR THE DRESSING:
    2 tablespoons red wine vinegar
    2 tablespoons olive oil
    1 garlic clove, minced
    1 teaspoon whole grain dijon mustard
    salt and pepper to taste
  • Combine all dressing ingredients in a mason jar, cover, shake until well combined. In a bowl, add the cooked potatoes and the rest of the ingredients except mixed greens, pour half of the dressing, stir, toss to coat.
  • Add the mixed greens to the salad, pour the remaining dressing toss to coat. Option: add grilled veggies.
