Fill a stock pot with water half way, add the potatoes. Boil the potatoes until tender. Remove from the heat. Drain and set aside until you're ready to build your salad.
FOR THE DRESSING:2 tablespoons red wine vinegar2 tablespoons olive oil1 garlic clove, minced1 teaspoon whole grain dijon mustardsalt and pepper to taste
Combine all dressing ingredients in a mason jar, cover, shake until well combined. In a bowl, add the cooked potatoes and the rest of the ingredients except mixed greens, pour half of the dressing, stir, toss to coat.
Add the mixed greens to the salad, pour the remaining dressing toss to coat. Option: add grilled veggies.
