Zesty Chicken with Quinoa
This is one of my favorite quinoa recipes. Quinoa is high in protein, it is the most protein-rich foods we can eat. It contains all the essential amino acids, high in fiber and rich in magnesium. Who wouldn’t want to get all the amazing health benefits of this superfoods?
Quinoa cooks quickly and it easily absorbs any flavor. It’s great with lemon juice and lemon zest, you can add any meat you’d like or even seafood. Today, I flavored my quinoa with chili powder and smoked paprika with fresh lemon juice and lemon zest – so good! Everyone in the house except me, never really liked quinoa but today the whole pan of this quinoa dish I made was gone in a short period of time. They’re asking for more, I guess I have to use the biggest pan I have in the house next time I make this recipe.

Recipe:
Ingredients
- 1 pound chicken breast, cut into small pieces
- 1 cup quinoa, uncooked
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1 yellow onion, chopped
- 2 tablespoons olive oil
- juice of one lemon
- zest of one lemon
- 1/2 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
- a handful of cilantro, chopped
- black pepper to taste
Instructions
- In a stock pan, add the quinoa and chicken broth. Place the pan on the stove over high heat, when it starts boiling, bring the heat to the lowest temperature, cover and let it simmer for 10 minutes or until the liquid is absorbed. Set the quinoa aside. Heat a pan with oil, saute garlic and onion, add the marinated chicken, stir to mix, cook thoroughly.
- Add the quinoa, chili powder, smoked paprika, salt, and pepper. Stir to mix, add the lemon and lemon zest, stir until well heated. Garnish with cilantro.
Marinade:
Ingredients
- 1 teaspoon chili powder
- juice of one lemon
- zest of one lemon
- 1 teaspoon salt
- black pepper to taste
Instructions
- Combine all ingredients. Marinate the chicken for 15 minutes or longer.
