Veggie Cake
I was so excited to make this cake today! I used my new salad machine to cut all the fruits and veggies I added to my cake batter. This machine does wonder! It cut smoothly and very easy to clean, I can even throw it in my dishwasher.
I did not add any water or oil to my cake batter and it came out moist. I love when I can indulge on something I wouldn’t even imagine very healthy and waist friendly.

Ingredients
- 1/2 cup coconut flour
- 1/3 cup pure maple syrup
- 1/4 cup walnuts
- 5 large eggs
- 1 small zucchini, grated
- 1 small delicious apple, grated
- 1 small carrot, grated
- 1 small pear, grated
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
Instructions
- Heat the oven to 350 degrees. Grease an 8-inch square pan. Combine all ingredients, stir to mix well. Pour the batter into the baking pan, bake for 30-40 minutes or until the toothpick inserted comes out clean. Remove from the oven, transfer to a cooling rack. Let it cool before serving.
