Simple Meatless Paella

After coming home from a long day of work, the last thing you want is to get overwhelmed with what you’re going to serve for dinner. So, I came up with this simple Paella recipe, not the typical Spanish dish but close. I like the smoky flavor with all the vegetables. You can certainly tweak it and add anything you want. Whether it’s your lemon shrimps, mussels or chicken…it’s totally up to you, you’ll still get the spicy smoky flavor regardless.

Ingredients
  

  • 2 cups brown rice, cooked and fluffed
  • 2 bell peppers, chopped
  • 1 medium zucchini, cut into strips
  • 1 cup cilantro, chopped, set a little aside for garnish
  • 2 stalks scallions, chopped, set a little aside for garnish
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon chili paste, I use Harissa chili paste
  • 1 1/2 tablespoons smoked paprika
  • 1/2 teaspoon turmeric
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • salt and pepper to taste

Instructions
 

  • Heat a pan with oil. Saute the garlic and onion, add the peppers, stir, cook until tender. Season with paprika, turmeric, chili paste, salt, and black pepper. 
  • Add the zucchini, stir, cook for 1 minute or until tender. Add the cilantro and scallions, stir to combine. Add the rice, frequently stir until well heated. Add the lemon juice, stir to mix well. Remove from heat, serve immediately. 
  • OPTION: You absolutely can add your seafood and meat. 
  • HOW TO COOK BROWN RICE:
    Rinse the rice, and in every one cup of brown rice, add 2 1/2 cups of water. Uncover, bring to boil. When boiling turn the heat to the lowest, cover and simmer until all liquid is absorbed. Fluff the rice by using a fork.
