Shrimp Fried Rice

If you have any leftovers and you want to make something quick here’s the perfect recipe for you. You can make fried rice with whatever you like. You can use any meat or any of your favorite veggies you like. The best rice to use is your a-day-old rice. If you’re planning to make fried rice, cook more rice the day before and use the leftover to get the best result.

Tips

  • In our everyday cooking, we always want the freshest ingredients. When I make my fried rice I always think of what leftover I can use and still make a bowl of delicious fried rice.
  • Use rotisserie chicken that’s not heavily seasoned.
  • When using shrimps, peel, and devein but leave the tail on to retain the nice shape of your shrimps.
  • Always use day-old rice. I find white rice is the best rice to use. 
  • If you’re not a big fan of soy sauce, just add regular salt.
  • I always use a lot of fresh garlic versus garlic powder.
  • Add green onions and sesame oil at the end of your cooking to get the most flavor. 

Shrimp Fried Rice

Equipment

  • Wok or a wide pan
  • Cooking wooden spoon or spatula
  • Bowl

Ingredients
  

  • 6 oz. shrimps, peeled, deveined, tail on
  • 4 cups day-old rice, cooked
  • 1/2 cup frozen peas or edamame
  • 1/2 cup frozen corn
  • 4 large eggs, beaten
  • 4 garlic cloves, minced
  • 2 stalks green onions, sliced
  • 1 carrot, peeled, diced
  • 1 onion, chopped
  • 3 tablespoons light soy sauce
  • 3 tablespoons oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground pepper

Instructions
 

  • Heat a wok or wide pan with oil. Add the onion, saute for a minute or until tender.
  • Add garlic, carrot, frozen corn, frozen peas, saute for a minute. Push the ingredients on one side of the pan, then add the eggs, stir until firm, just like making scrambled eggs.
  • Add the shrimps and cook until they turned pink or opaque.
  • Add the rice and soy sauce, stir until well combined. Add the sesame oil, ground pepper and, green onion, stir until combined. Serve warm.
