Red Rice Pad Thai Noodles
As I was shopping at Trader Joe’s yesterday, I found this red noodles. I love Pad Thai but I try to have them occasionally because the noodles are heavy in my tummy. Once in a while, my husband will ask for a traditional dish, and I thought he would be happy to have some Pad Thai (although we are originally from the Philippines) you get what I mean. Not exactly the authentic kind but close. I use the red noodles which are close to the regular pad thai noodles. I didn’t use fish sauce, not really a big fan of fish sauce, but I add some shrimps to get the seafood taste in it.
I made this recipe as simple as it can be to get close to the authentic Pad Thai. Just made it medium spice, I used jalapeno pepper vs. red chili pepper and I added some scrambled eggs for color. I love buying Argentinian Wild Caught Shrimps which taste close to a lobster. They are the perfect shrimps if you’re going to make scampi.

Ingredients
- 1 package red Thai noodles, you can find them at Trader Joe's
- 1 pound Argentinian wild caught shrimps (or regular shrimps) peeled and deveined
- 1 cup cilantro, chopped
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 jalapeno pepper remove seeds for mild taste
- 1 tablespoon fresh lime juice
- 1 tablespoon roasted peanuts
- 2 tablespoons olive oil
- 2 stalks green onions chopped
- 3 eggs, scrambled
- 4 garlic cloves minced
- salt and pepper to taste
Instructions
- Cook the noodles according to package instructions.
- Heat a pan with oil, saute garlic and onion. Add bell pepper, green onions, jalapeno pepper, stir, cook until tender. Add the shrimps, cook until they turn opaque or starts curling.
- Add the noodles, season with salt and black pepper, stir to combine. Add the cilantro, lime juice, and scrambled eggs, stir to mix well. Remove from the heat, sprinkle with roasted peanuts. Serve immediately.
