Buffalo Cauliflower and Apple Pecan Salad

Thinking of what to have for dinner but can’t decide because all you see at the store are highly processed foods that will just make you more tired. You don’t have to settle for TV dinners to have your meals. Here’s the baked Buffalo Cauliflower recipe that is simple and easy to make, you’ll have dinner in no time.

Ingredients
  

  • 1 head cauliflower cut into florets
  • 1/4 cup Sriracha
  • 1 cup almond meal
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions
 

  • Heat the oven to 375 degrees. Line a baking sheet pan with parchment paper. 
  • In a bowl, season the cauliflower with Sriracha and salt. Combine well, make sure the cauliflower's well coated. 
  • Dredge the cauliflower in eggs then in almond meal. Line the cauliflower evenly on the baking pan. Drizzle with oil, bake for 30-40 minutes or until tender.  

Apple Pecan Salad

Ingredients
  

  • 2 cups mixed greens
  • 1 apple, chopped
  • 1/4 cup roasted pecans
  • 1 mandarin orange, peeled and sliced
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon whole grain Dijon mustard
  • 1 teaspoon honey
  • salt and pepper to taste

Instructions
 

  • In a bowl, combine honey, apple cider vinegar, oil, Dijon mustard, salt, and pepper. Stir to combine well. 
  • In a different bowl, combine the apple, mixed greens, and orange. Pour half of the dressing, stir, toss to coat. Sprinkle the pecans on top, drizzle the rest of the dressing.
