  • Stokes Purple® Sweet Potatoes: Wash and peel the purple sweet potatoes. Place them in a bowl of water just like the regular potatoes, this will prevent them from browning. Then slice and cut into an inch cubes. 
  • Butter: Unsalted butter, cut into cubes.

  1. PREP THE SWEET POTATOES

Ingredients
  

  • 4 medium size Purple Sweet Potatoes, washed, peeled, and cubed
  • 1/2 cup or one stick of unsalted butter, cubed
  • 1/2 cup light brown sugar
  • 1/4 cup white granulated sugar
  • 1 teaspoon cinnamon
  • 1 cup heavy cream or evaporated milk
  • 1 teaspoon pure vanilla extract
