Overnight Chia Seeds Chocolate Parfait

Ingredients
- 1 canned coconut cream
- 3 tablespoons chia seeds
- 3 tablespoons maple syrup divided
- 2 tablespoons unsweetened cocoa powder
- 1 banana sliced
- 1 tablespoon unsweetened coconut flakes
Instructions
- Place the coconut cream and chia seeds in an airtight container. Add cocoa powder and 1 1/2 tablespoons maple syrup. Stir until well combined. Cover and refrigerate overnight.
- When ready to serve, layer the chia seed mixture in a glass, arrange the banana slices in between layers and drizzle with remaining maple syrup. Top with coconut cream, coconut flakes, and melted chocolate.
- Option: Top with crushed roasted pecans. Add a scoop of vegan protein powder

- 1 canned coconut cream
Instructions
- Place the canned of coconut cream in the refrigerator and leave it overnight.
- Open the refrigerated canned coconut cream. Scrap the top solid part and place in a bowl. Use a handheld mixer, set to medium speed. Mix the coconut cream until smooth or whipped consistency.
