Place the coconut cream and chia seeds in an airtight container. Add cocoa powder and 1 1/2 tablespoons maple syrup. Stir until well combined. Cover and refrigerate overnight.
When ready to serve, layer the chia seed mixture in a glass, arrange the banana slices in between layers and drizzle with remaining maple syrup. Top with coconut cream, coconut flakes, and melted chocolate.
