GRILLED SALMON:
- Salmon Fillets skin on– You can get 2 salmon steaks and cut them into two pieces, that’s what I’ve done in this recipe (a total of 4 pieces). Or just buy two fillets (the cooking time may vary).
- Sea salt and red chili pepper flakes – I used sea salt, if you’re using table salt, it might be saltier and you might have to adjust the salt. For the pepper, you can use ground pepper if you don’t have red chili pepper flakes.
- Garlic clove – Either minced or grated
- Lemon zest – Zest one lemon or measure a tablespoon of lemon zest
- Lemon juice – Juice of one lemon or measure two tablespoons of fresh lemon juice
- Oil – You can use either olive oil or any neutral oil. I will not use extra virgin olive oil. You want to use oil that will not burn fast.
ROASTED POTATOES:
- Red potatoes – I used small red potatoes and cut them in halves. I didn’t peel them, the skin turned out nice and crispy after roasting. You can use any type of potatoes you like.
- For the seasonings – Garlic powder, Italian seasoning, sea salt, and red chili pepper flakes
- Small red onion – You can use yellow or white onions, and slice them.
- Olive oil – To crisp and help the potatoes brown
- Chopped fresh flat-leaf parsley – for garnish

GRILLING THE SALMON:
- Place the salmon in a bowl or platter, and season with salt and pepper on both sides. Add minced or grated garlic, lemon zest, lemon juice, and oil. Toss the salmon until well coated.
- Heat the grill pan with more oil. Once the oil is hot enough, add the salmon and cook for 5-7 minutes on each side depending on how thick the salmons are.
- Keep the salmon warm. Cover with foil until you’re ready to serve them.
ROASTING POTATOES:
- Preheat the oven to 425ºF.
- Cut the potatoes into 2-inch cubes with the skin on. Line a baking sheet pan with parchment paper.
- Place the potatoes in a prepared pan and season them with, garlic powder, Italian seasoning, salt, and red chili pepper flakes.
- Add the sliced onion and drizzle olive oil. Toss to coat well, and spread the potatoes in a single layer for even roasting.
- Place in the oven and roast for 35-40 minutes or until fork tender.
just a side note for Lemon Garlic grilled salmon
- Roast the potatoes then grill the salmon: I know I made mine backward, I guess I wasn’t thinking well. Salmon cooks fast, you only need to wait 5-7 minutes while the potatoes cook longer you’ll have to wait for about 35-40 minutes. If you would have cooked the salmon first, It would be cold by the time you serve it. Don’t do what I did, just do what I say (trust me on this).
- Spicy mayo: The seasoning on the salmon is very simple, if you like to bump up your meal and add some dipping sauce, I’d go with spicy mayo. (See notes for the recipe). You can also try my recipe for Homemade Ranch Dressing and Creamy Cilantro Dressing.
- Cooking time: The cooking time depends on how thick the salmon fillets are. Don’t cook them too long, just like any other seafood you don’t want them dry or rubbery. You want them moist and tender. It should be golden brown and it should flake easily when flake with a fork.

GRILLED SALMON

- 2 tablespoons olive oil, more for grilling
FOR THE ROASTED POTATOES
- 7 small red potatoes, skin on, cut into cubes
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon red chili pepper flakes
- 1 small red onion, sliced
- 3 tablespoons olive oil
- 1/4 cup chopped parsley for garnish
Instructions
FOR GRILLING THE SALMON
- Place the salmon in a bowl or platter, then season with salt, red chili pepper flakes, garlic, lemon zest, and lemon juice. Drizzle oil and toss to coat.
- Heat the grill pan with more oil. Add the salmon and cook for 5-7 minutes on each side depending on how thick the salmon fillets are. Set aside, and cover with foil until ready to serve. (see NOTE #1)

You can use any kind of fish that is firm and can hold for grillings like swordfish, tuna, mahi-mahi, and snapper. Or if you like meat instead then use chicken, pork chops, or tender-cut beef. You can also grill shrimp if you prefer shellfish. Just note that the cooking time varies for a different types of fish or meat.
Microwave: Use a microwavable dish, then cover with a damp paper towel, and heat on high for 1 minute depending on the thickness of your salmon fillet.
Stovetop: Heat a grill pan or skillet with oil. Add the salmon, and heat for 1-2 minutes on each side also depending on the thickness of your salmon fillet.
Aside from roasted potatoes, there are lots to choose from. You can serve it with mashed potatoes, steamed rice, steamed vegetables, stir-fried vegetables, or grilled veggies like asparagus.
Place your leftovers in an airtight container and refrigerate for 2-3 days. If freezing, place them in a freezer bag and freeze them for up to 4 months. Thaw before reheating.
