Lemon Almond Cookies

This easy and simple dessert is the perfect match for your sweet tooth. I used almond meal in this recipe but you can make 2 cups of blanched whole almonds and process them in the food processor until you achieve a finely ground consistency. So basically this almond cookie is flourless.

Ingredients
  

  • 2 cups almond meal
  • 1/4 cup coconut palm sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon almond slices
  • 1 teaspoon vanilla extract
  • 1 whole egg
  • Juice of one lemon
  • Zest of one lemon

Instructions
 

  • Preheat your oven to 350. Line a baking sheet pan with parchment paper. Combine all ingredients in a bowl except almond slices. Mix well until the batter becomes sticky. 
  • Form a ball shape, press onto the prepared pan. Repeat for the rest of the batter. Sprinkle the almond slices on top. Bake for 20 minutes or until firm. Cool on a cooling rack for 5 minutes before serving.
