Asian Spring Rolls

These colorful spring rolls are so easy to make. This is an ideal salad for lunch to bring to work. I used tempeh but you can certainly use grilled chicken, shrimps, avocado, or any of your favorite high protein foods. The sauce is also great for marinating meat, fish, tofu, or just to add to your everyday salad.

 

I added peaches and pineapple for a little sweetness

 

The veggies:

Shredded carrots

Cucumber, julienned

Shredded romaine lettuce

Shredded red cabbage

Cilantro

Green onions

I marinated the tempeh in soy sauce, ginger, garlic, sesame oil, and red chili pepper flakes. Then I pan fried them with olive oil.

 

You can also just have it as a salad

Tempeh is a fermented soy, it’s fully cooked so when you marinate them – you’re only reheating it when ready to assemble your spring rolls. Do not cook for too long, they turn brown quickly – so make sure you remove it from the pan as soon as it turns golden brown. Cut them thin so it’s easy to fill your spring rolls.

 

Recipe for the tempeh:

Ingredients
  

  • 1 package of tempeh
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red chili pepper flakes
  • 2 tablespoons olive oil

Instructions
 

  • Cut the tempeh in a half, then cut again into four pieces. Combine the rest of the ingredients, stir to mix. Add the tempeh and marinate for about 5 minutes. 
  • Heat a pan with oil, add the tempeh. Cook until golden brown.

Ingredients
  

  • 5-10 rice paper wrapper
  • 1 cucumber, julienned
  • 1 carrot shredded
  • 2 cups shredded Romaine lettuce
  • 1 cup red cabbage
  • 1 peach, thinly sliced
  • 1 cup pineapple, thinly sliced, optional
  • 2 stalks green onions, chopped
  • 1/2 cup cilantro

Instructions
 

  • In a deep wide pan, ideally, baking sheet pan, submerge the rice paper wrapper for about 30 seconds or until soft and pliable.  When soft, place them onto a flat surface or wide wooden cutting board.
  • Fill the wrapper starting top, then roll, tuck the two ends like a burrito and continue rolling until you reach the end and close it. Cut into half if you like and dip into the sauce.

  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons olive oil
  • 2 tablespoons honey
  • 1 garlic clove, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon roasted sesame seeds

Instructions
 

  • Combine all ingredients, stir to mix well. Use as salad dressing or dipping for your Asian Spring Rolls
