Kill 2 Birds with One Stone

We usually eat very little meat but today my husband begged me to cook beef sirloin, so I did. My daughter misses eating chicken and she also asked me to cook some veggies with chicken, so I did too. Kill 2 birds with one stone “right” why not. I chopped enough garlic and unions that I used for these 2 recipes, had some sweet orange peppers and mushrooms, lemons and sesame oil. I also grilled the asparagus as a side dish. I’m lucky that my family is ok eating the same food for 2-3 days, this is why I love cooking in batches – it saves so much time.

 

Let start with Beef and Caramelized Onion

 

 

Recipe

 

Ingredients
  

  • 1 pound beef sirloin thinly sliced
  • 1 onion sliced
  • juice of one lemon
  • zest of one lemon
  • 2 tablespoons olive oil
  • 1 teaspoon 21 seasoning salute
  • 1/4 cup low sodium soy sauce
  • salt and pepper

Instructions
 

  • In a bowl, marinate the beef with lemon, lemon zest, 21 seasoning salute, soy sauce, salt and pepper for 30 minutes. Use the same lemon you use for the juice to get the zest. Heat a pan with oil, add the onions, stirring frequently, cook until caramelized. Set Aside. 


  • Heat a pan with oil, add the marinated beef, cook to desired doneness. Add the onions, stir until well heated. Remove from the heat, serve with grilled asparagus. 

The second recipe is Sesame Chicken and Mushrooms

Ingredients
  

  • 1 pound chicken breast, thinly sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 8 oz. mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon 21 seasoning salute
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 1 tablespoon low sodium soy sauce
  • 2 tablespoons olive oil
  • salt and pepper

Instructions
 

  • Heat a pan with oil, saute garlic and onion, add the chicken, cook thoroughly. Add the pepper and mushroom, cook until tender. Add the soy sauce, sesame oil, salt, and pepper, stir, simmer for a minute. Remove from the heat, sprinkle some sesame seeds. Serve with grilled asparagus.
