Green Jackfruit Flautas
Shredded green jackfruit, sauteed in garlic, onion, and tomatoes. Seasoned with chili powder, smoked paprika, salt, and pepper. Wrapped in flour tortillas, then fried until golden brown. Side leafy greens and corn salad with homemade Ranch dressing for dipping.

what is jackfruit?
Jackfruit is a tropical fruit, sweet when ripened. It is also great for making savory dishes when un-ripened. The skin is thick and spiky, it is composed of multiple bulbs of seeds containing flesh around the core. They grow on large trees. The flesh is yellow and sweet when ripened, and can be eaten raw. The unripened jackfruit has a neutral flavor and it’s more suitable for making savory dishes.

Green Jackfruit Flautas
Equipment
- Frying pan
- Bowls

Ingredients
- 3 tablespoons olive oil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 2 Roma tomatoes, deseed, diced
- 2 canned green jackfruit, drained, shredded
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
FOR THE HOMEMADE RACH DRESSING
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- 1 teaspoon parsley flakes
- 1/4 teaspoon salt
- 1/4 teasppn hot sauce
Instructions
- Heat a pan with oil, add the onion, and saute until tender. Add garlic, tomatoes, chili powder, smoked paprika, salt, and ground pepper. Continue sauteing for 2 minutes.
- Add the green jackfruit, stir, and cook for a minute. Remove from the heat, and cool before filling the tortillas.
- Scoop 2 tablespoons of the jackfruit filling, and place it in the middle of the tortilla. Roll until the end.
- Heat oil in the pan over medium heat. Add the tortilla, facing the fold side first. Fry until golden brown.
FOR THE RANCH DRESSING
- In a bowl, combine all dressing ingredients. Mix until well combined. Drizzle on the top of the green salad. Use it for dipping flautas.
