Gooey No Bake Brownies

I give you permission to make life a little sweeter!

This gooey brownie recipe is so simple, only 3 ingredients and your food processor – that’s it. I use all natural Medjool dates, no artificial flavorings or preservatives. Treat yourself without feeling guilty and have fun making it.

Make sure you process the mixture to the right consistency. It should come out almost in one piece, it’s ok if it’s a little oily from the nut – but be careful not to turn it into a nut butter.

Ingredients

  • 1 cup dates
  • 1 cup walnut
  • 1 tablespoon unsweetened cocoa powder

Instructions

  • Line a 6x6 square pan with parchment paper. Let extra paper hangs on the sides so it's easier to pull out the brownie from the pan.
  • Place the walnuts in the food processor first. Pulse for 30 seconds, then process until finely ground almost powdery consistency but don't let it turn to nut butter.
  • Add the dates and cocoa powder. Process until it turns into sticky consistency. Scrap the mixture out of the food processor and place it into the pan with parchment paper. Press the mixture with your hand until it spreads out to all ends of the pan.
  • Refrigerate for 2 hours or overnight. Pull the brownie out of the pan, cut into squares and store in the refrigerator.
