why cut the fruits into small diced
I like to cut my fruits into small dice to fit all the fruit medley in one spoon. This way, I get a burst of freshness from those delicious and juicy fruits. It’s not the same experience when the fruits are chunky. I don’t get all the succulent benefits of those in-season fruits. Not only do they taste amazing, but they also look beautiful. You’ll have a beautiful and bright-colored bowl of fruits. They look like jewels!

FOR THE FRUIT SALAD:
Here are my favorite Summer fruits:
- Mango, strawberries, blueberries, kiwis, plums, and peaches. Sometimes I add pineapple to my fruit salad. It gives a nice cleanse to the body. I also like to squeeze lemon juice to keep their bright nice colors. Adding slices of banana before serving makes your salad sweet and creamy.
- Substitute your salad with any fruit you like. Citruses like oranges and grapefruit are very refreshing and they also bump up your Vitamin C. Pretty much all kinds of fruits are available at the grocery store but if you use the ones in season, you’ll get the juiciest and sweet fruits. And they’re high in vitamin content.
FOR THE OVERNIGHT CHIA SEEDS:
- What are chia seeds? They can be a healthful addition to your everyday meal. It is an excellent source of all kinds of vitamins. Chia seeds come from the desert plant Salvia hipanica, a member of the mint family native to central and southern Mexico. It absorbs liquid and rapidly swells up, then develop a gelatinous texture when soaked in water. You can make chia seeds pudding by adding plant-based milk and leaving them soaking overnight.
- Pure maple syrup is the best sweetener I use whenever I make my overnight chia seed pudding.
- Almond milk or coconut milk is my go-to when it comes to soaking my chia seeds.

how to make easy overnight chia seeds with fruit topping
- Make the overnight chia seeds. In an airtight container, add the chia seeds, almond milk, maple syrup, and cinnamon. Stir to mix, cover and place in the fridge overnight.
- Peel the fruits, slice them into thin strips then cut them into small dice.
- Transfer the diced fruits into a salad bowl.
- Add 1-2 tablespoons of maple syrup and squeeze lemon juice. Toss to coat, and set them aside.
- Start layering the chia seeds and fruits. In a mason jar, add about 1/4 cup of overnight chia seeds. Add one tablespoon of almond milk, and then add the fruits. Continue layering until you reach the top.
- Place slices of banana on top.

Ingredients
FOR THE FRUIT SALAD
- 2 whole ripened kiwis, peeled, small diced
- 2 red ripened plums, deseed, small diced
- 1 ripened mango, peeled, small diced
- 5 strawberries, small diced
- 1 cup blueberries
- 2 tablespoons pure maple syrup
- 1 tablespoon freshly squeezed lemon juice
- banana slices, optional
FOR THE OVERNIGHT CHIA SEEDS
- 1 cup + 2 tablespoons almond milk or any plant-based milk,
- 4 tablespoons chia seeds
- 1 teaspoon cinnamon
- 3 tablespoons pure maple syrup, add more if you like
Instructions
FOR THE FRUIT SALAD
- Peel the kiwis and mango. Slice the flesh of the mango around the pit. Cut the plums in half and remove the seed. Remove the green leaves on top of the strawberries.
- Cut all the fruits into strips first, then cut them into small dice. Place all the diced fruits in a salad bowl. Add the maple syrup and lemon juice. Toss the fruit salad to coat. Serve cold.
FOR THE OVERNIGHT CHIA SEEDS
- Place the almond milk, chia seeds, cinnamon, and maple syrup in an airtight container. Stir to combine, and cover with a fitted lid. Place the chia seeds mixture in the fridge overnight.
- To assemble: the next morning, start layering the chia seeds and fruit salad. Place 1/2 cup of overnight chia seeds in a mason jar or a cup. Pour 2 tablespoons of almond milk (without mixing). Place 1/4 cup of the fruit salad.
- Continue layering to the rim of the mason jar. Add slices of banana on top.

- HOW DO I KEEP THE BANANA FROM BROWNING?
You can either cut the banana into slices or dice. Add them last when you’re ready to eat your fruit salad. That way it will not have a chance to oxidize and you’ll enjoy a fresh and sweet banana slice.
- DO I HAVE TO WAIT OVERNIGHT TO ENJOY MY CHIA SEED PUDDING?
At least leave the chia seeds soaking for an hour or until they swell up and have a pudding-like consistency.
- WHY IS IT BETTER TO EAT FRUITS THAT ARE IN SEASON
Fruits are sweeter, juiciest, and contain higher vitamins when in season. These are pretty good considerations when you’d like to have the full benefit of eating clean. The same way when with your vegetables.
