I really enjoy my vegetable garden this year. So much fun harvesting the sweet cherry tomatoes and all kinds of herbs. I guess I was lucky because I didn’t have to install a fence or chicken wire around my garden so the critters can’t get their little paws on my beautiful vegetables.
Today’s recipes are salsa and guacamole, these are what I say “kill two birds with one stone”. I say that because all I have to do is make my salsa and add it to the mashed avocado….WHALA! I created a delicious guacamole.
- 4 avocados, pitted, mashed
- 4 cups cherry tomatoes
- 1 jalapeno pepper
- 1 bunch cilantro
- 1 red onion
- Juice of one lime
- Sea salt and black pepper to taste
Combine all ingredients except the avocados in a food processor. Process until finely chopped.
In a bowl, combine the avocados and salsa, stir to mix well. Adjust the salt to your desired taste.
