Ingredients

Mango Salsa ingredients
Cooked chicken leg quarters
Chicken Taco spices

MANGO SALSA:

  • Ripe mangos – I use two ripened mango, peeled, and cut into small dice.
  • Roma tomatoes – Deseeded and diced
  • Red onion – One small or half of a big red onion. Finely chopped.
  • Jalapeno pepper – diced with the seeds for more heat.
  • Lime juice– prevents the mango from turning brown and gives a citrus flavor.
  • Garlic -finely minced
  • Cilantro – chopped
  • Sea salt and ground pepper to taste

CHICKEN AND SPICES:

  • Chicken leg quarters – this recipe used 4 chicken leg quarters. Pouched, skinless, and shredded. You can also use rotisserie chicken.
  • Spices – smoked paprika, garlic powder, onion powder, cumin, oregano, red chili pepper flakes, and salt. 
  • Oil – for sauteing 
  • Tortilla – you can use either flour or corn tortilla

HOMEMADE MANGO SALSA CHICKEN TACOS

  1. MAKE THE MANGO SALSA:

    Mango salsa is very simple to make. Peel and cut the mangos into small dice. Remove the seeds from the tomatoes and dice them. Chop the onion and jalapeno pepper, and leave the seeds if you want extra heat. Finely chop the cilantro leaves, and minced the garlic. Place all ingredients in a bowl, season with salt, and squeeze with lime juice. Toss to coat well. Set them aside. You can make extra to pair with your next dish. Mango salsa complements grilled meat and fish. It gives a refreshing flavor to any dish.

  2. COOK THE CHICKEN:

    In this recipe, I used 4 chicken leg quarters and cooked them until tender and I was able to pull the meat with the fork (shredded). Or you can use a whole rotisserie chicken and shred the meat.

  3. SAUTE THE CHICKEN WITH THE SPICES:

    Heat the pan with oil. Add the shredded chicken, and cook for 2 minutes or until well heated. Add the spices, and stir to combine. Continue cooking for another minute or until aromatic.

  4. SERVE:

    Serve with flour or corn tortilla. Top with the Mango Salsa.

Ingredients
  

FOR THE CHICKEN

  • 4 chicken leg quarters or 4 cups shredded rotisserie chicken
  • 2 tablespoons olive oil

FOR THE SPICES

  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon red chili pepper flakes

FOR THE MANGO SALSA

  • 2 ripened mangos, small diced
  • 5 Roma tomatoes, small diced
  • 1 small red onion, finely chopped
  • 1 jalapeno pepper small diced
  • 1 cup chopped cilantro leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon freshly squeezed lime juice

Instructions
 

FOR THE CHICKEN

  • If you're using rotisserie chicken, skip these instructions and shred the chicken meat. If you're using chicken leg quarters, then fill a pot with water halfway, and add the chicken (see NOTE #1).
  • Boil for 10 minutes or until the chicken is cooked through (see NOTE 2).
  • Reserve 1/4 cup of water and drain the rest, then cool the chicken. Remove the skin and pull the meat using a fork or knife (shred). Set them aside.

FOR THE SPICES

  • In a small bowl, combine all the spices, and mix until well combined.

FOR THE MANGO SALSA

  • Cut all ingredients into small dice, place them in a bowl, and add the lime juice. Toss to combine. Set aside until you're ready to assemble your tacos.

SAUTEE THE CHICKEN

  • Heat oil in a nonstick skillet. Add the chicken, spices, and 1/4 cup of reserve water. Stir and cook until the chicken is well heated.
  • Serve with corn or flour tortilla. Top with the mango salsa.
  • Option to add sour cream or guacamole (see NOTE 3).

Notes

NOTE #1 – I found a package of inexpensive chicken leg quarters at our local grocery store and decided to make this recipe. You have the option to use rotisserie chicken. Easier for you because it requires no additional cooking. Remove the skin and pull the meat with a fork or knife (shred). Discard the bones. 
NOTE #2 – When choosing to cook the leg quarters, make sure you cook them all the way through until the meat is tender and you’re able to pull them with a fork or knife. Remove the skin and discard the bones. You can save the broth for later use. 
NOTE #3 – Option to use whatever additional condiments you like. You can use regular salsa, add pickled jalapeno, sour cream, and guacamole
