From time to time I’d like to treat myself to something delicious and easy to make. These Cinnamon Banana Muffins are the perfect choice for afternoon snacks with tea or for breakfast with your cup of coffee. In our household, we consume a lot of bananas. My husband loves to make smoothies in the morning adding a couple of bananas in it. Honestly, we buy too much that they start browning. The best time to use bananas when making desserts is when they’re ripened and the outside peel is getting those brown spots.
FOR THE DRY INGREDIENTS:
- All-purpose flour
- Ground cinnamon
- Baking powder
- Salt
THE REST OF THE INGREDIENTS:
- Three bananas
- Large eggs
- Sugar
- Canola oil
SUBSTITUTIONS:
- You can use oats instead of all-purpose flour
- Use maple syrup instead of granulated sugar
- You can eliminate eggs and use 2 tablespoons of flaxseeds soaked in a 1/4 cup of water
- Apples are a great addition
- You can also add nuts and dried fruits like raisins or dried cranberries

how to make cinnamon banana muffins
- Preheat the oven to 360ºF. Line the muffin tin with paper cups.
- Mix all dry ingredients. Use a whisk or a sifter to make sure there are no big pieces of flour in the mixture. You want all dry ingredients well incorporated and no lumps.
- Mash the bananas. You can use a fork or potato masher to mash three bananas.
- Mix the rest of the ingredients. In a separate bowl, add sugar, eggs, and oil. Use a whisk, and mix until the mixture is light in color and smooth.
- Incorporate the mashed bananas. Add the mashed bananas to the wet ingredients and continue mixing until well combined.
- Slowly add the dry ingredient, a third at a time. Mix until well incorporated and there is no more white flour visible.
- Use a cookie or ice cream scoop. Scoop about 1/4 cup or until 3/4 full into each lined cup.
- Bake for 20-25 minutes or until the toothpick inserted in the middle of the muffin comes out clean.
- Place the muffins on a cooling rack and cool for at least 30 minutes.
- Brush melted butter on top and sprinkle with cinnamon sugar.

- 1 tablespoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 bananas, mashed

- 3/4 cup sugar
- 1/2 cup canola oil
FOR THE TOPPINGS
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 350ºF. Line a muffin tin with paper cups.
- Combine the dry ingredients. In a bowl, add the flour, cinnamon, baking powder, and salt. Use a whisk, and until well combined.
- Mash the bananas. In a separate bowl, add sugar, eggs, and canola oil. Whisk until light in color and smooth.
- Add the mashed bananas and mix until well incorporated.
- Slowly add the dry ingredients, about a third at a time. Use a spatula and mix until well combined.
- Use a cookie scoop. Scoop 1/4 cup of 3/4 full of batter in each cup. Bake for 20-25 minutes or until the toothpick inserted in the middle of the muffin comes out clean.
- Cool on a cooling rack. Spread or brush the melted butter on top and sprinkle the cinnamon sugar.

- Melt the butter. In a separate bowl, combine brown sugar and cinnamon. Drizzle or brush the melted butter on top and sprinkle the cinnamon sugar.
