Blueberry Oat Muffins

Grab and Go Breakfast!

These muffins are so easy to make, what an ideal breakfast to have during those morning rush. You can bake 2 or 3 batches and freeze them if you like. You can also add any of your favorite berries or fruits, or make them chocolate flavor by adding unsweetened cocoa powder and add some nuts.

Ingredients
  

  • 1 cup old-fashioned oats, you can use the gluten free oats if you like
  • 1 cup blueberries
  • 1/4 cup pure maple syrup
  • 3 eggs
  • 3 very ripe bananas
  • 1 tablespoon coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions
 

  • Heat the oven to 350 degrees. Line a muffin pan with paper cups. Combine all ingredients except blueberries in a food processor. Process until smooth.
  • Transfer the mixture to a bowl and fold the blueberries. Scoop about 1/4 cup of the mixture into each muffin cups. Bake for 30-35 minutes or until a toothpick inserted in the middle of the muffin comes out clean. 

 

You can also make waffles using the same recipe. All you need is a waffle maker, grease it with coconut oil to avoid sticking to the pan then pour the mixture, wait 3-5 minutes or until done. It’s faster to make the waffles, but either way, it’s guaranteed you’ll enjoy these delightfully healthy breakfasts.
