Chocolate Chip Oatmeal Cookies

This is one of those afternoon sweet cravings and you’re looking for something quick and delicious. Check out these classic chocolate chip cookies with oats and a hint of peanut butter. Super simple to make and it bakes in less than 15 minutes.

what you need to get:

  • All purpose flour (2 cups)
  • Quick oats (2 cups)
  • Chocolate chips (1 cup)
  • Butter (1 cup or 2 sticks)
  • Brown sugar (3/4 cup)
  • White sugar (1/2 cup)
  • Eggs (2)
  • Vanilla (1/2 teaspoon)
  • Baking powder (1/2 teaspoon)
  • Baking soda (1/2 teaspoon)
  • Peanut butter (1/4 cup)
  • Cinnamon (1 teaspoon)
  • Salt (1/2 teaspoon)

Tips for baking

  • Baking is exact science. The measurements are exact especially when it comes to leavening. Leavening is a substance used in dough or batter to make it rise (like baking powder and baking soda). 
  • Using a scale help to reassure that you’re not using too much flour that can make your bake goods dry and densed. Watch my Homemade Bread to see how to properly measure your dry ingredients.  
  • Do not overmix the batter, this means too much air are incorporated into mixture. When the batter is mixed for an extended period of time, it result in extra gluten development that makes your bake goods gummy and upleasantly chewy. 
  • Do not overbake. This could dry out your cake, bread, or cookies. 
  • Take your time, baking is about enjoying the process and not stressing yourself. Read through the recipe. You can modify it and add your favorite flavorings.

Chocolate Chip Oatmeal Cookies

  • Mixing bowls
  • Mixer
  • Medium-sized cookie scoop
  • Spatula

Ingredients
  

  • 1 cup or 2 sticks of unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1/4 cup creamy peanut butter
  • 2 cups all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper.
  • In a mixing bowl, add the butter and mix for a minute or until fluffy. Add brown sugar and white sugar, mix until creamy. Add the eggs one at a time, mix for a minute or until light in color. Add the peanut butter, continue mixing until smooth.
  • In another bowl, combine the flour, oats, baking powder, baking soda, and cinnamon. Use a whisk, mix until well combined.
  • Add the vanilla in the butter and sugar mixture, mix to combine. Turn the mixer to low speed and gradually add the flour mixture, about 1/3 at a time, continue mixing until well combined.
  • Use a spatula and fold in the chocolate chips. Bake for 12-15 minutes or until the side turns golden brown. The cookies might be soft but they'll continue to bake after taking them out of the oven. Do not overbake.

Notes

  • Place the cookie in an airtight container, it should stay fresh for 3-4 days.
