Chocolate Chip Oatmeal Cookies

Chocolatey, chewy cookies with oats and peanut butter. Easy to make and a great remedy for sweet cravings.

- 1 cup or 2 sticks of unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 1/4 cup creamy peanut butter
- 2 cups all-purpose flour
- 2 cups quick oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon
- 1 teaspoon vanilla
- 1 cup chocolate chips
Preheat the oven to 350ºF. Line a baking sheet pan with parchment paper.
In a mixing bowl, add the butter and mix for a minute or until fluffy. Add brown sugar and white sugar, mix until creamy. Add the eggs one at a time, mix for a minute or until light in color. Add the peanut butter, continue mixing until smooth.
In another bowl, combine the flour, oats, baking powder, baking soda, and cinnamon. Use a whisk, mix until well combined.
Add the vanilla in the butter and sugar mixture, mix to combine. Turn the mixer to low speed and gradually add the flour mixture, about 1/3 at a time, continue mixing until well combined.
Use a spatula and fold in the chocolate chips. Bake for 12-15 minutes or until the side turns golden brown. The cookies might be soft but they'll continue to bake after taking them out of the oven. Do not overbake.
