Chicken Taco Soup

Chicken Taco Soup is everyone’s favorite when it comes to dinner time. No fuss, full of flavor, and very comforting. My homemade taco mix is also great for seasoning steak, fish, and roasted veggies. Top it with your favorite toppings and enjoy a bowl of your taco soup.

Taco is one of the most famous dishes in the world – if you ask me. The ingredients are easy to find, the flavor is amazing, and it’s budget-friendly. A lot of families I know look forward to “Taco Tuesday”. Or it can be any day of the week it just happens that “Taco Tuesday” rhymes well. There’s a history as to why it’s called the way it’s called, but I love Mexican food and I don’t mind having it any day.

Homemade taco seasoning. Let’s start with good seasoning, garlic powder, onion powder, smoked paprika, cumin, chili powder, dried oregano, sea salt, and red chili pepper flakes. 

Aromatics and veggies. Onion, garlic, bell pepper (combined half red and half green), and frozen corn.

The easiest way is to buy a rotisserie chicken and shred the meat. Or cook the dark meat and save the broth to use for the soup.

Canned tomatoes and black beans are convenient and readily available.

Toppings are always optional. I used sour cream, shredded cheese, avocado, sliced jalapeno, cilantro, and more lime.

how to make chicken taco soup

1. Saute the aromatics. Heat a soup pot with olive oil. Start sauteing the onion until tender or translucent, then add the garlic and continue sauteing until fragrant. 

2. Combine dried herbs and spices. In a small bowl, mix the homemade taco seasoning, garlic powder, onion powder, smoked paprika, cumin, chili powder, dried oregano, sea salt, and red chili pepper flakes. 

3. Add the seasoning to the pot, and stir to combine. Stir in bell pepper, black beans, cooked chicken, diced tomatoes, and chicken broth. Stir, lower the heat, cover, and simmer for 10 minutes. 

4. Finish cooking. Add corn and squeeze lime juice, stir to combine. Taste and adjust the seasoning to your liking. 

5. Option to add toppings. The toppings like avocado, sour cream, chopped cilantro, and shredded cheese, add depth of flavor to the soup but are optional.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 minced garlic cloves
  • 1 bell pepper, deseed and diced
  • 15 oz. canned black beans, drained and rinsed
  • 2 cups cooked chicken
  • 15 oz. canned diced tomatoes
  • 2 cups chicken broth
  • 1 cup frozen corn
  • juice of one lime

HOMEMADE TACO SEASONING

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red chili pepper flakes
  • 1 teaspoon sea salt

OPTIONAL TOPPINGS

  • avocado
  • sour cream
  • jalapeno sliced
  • chopped cilantro
  • more lime juice
  • shredded cheese

Instructions
 

  • Heat a soup pot with olive oil. Saute the onion for a minute or until tender and translucent. Continue sauteing, then add the garlic and cook until fragrant.
  • In a small bowl, combine taco seasoning, add to the pot and stir to combine. Stir in the bell pepper, black beans, cooked chicken, diced tomatoes, and chicken broth. Stir, lower the heat, cover, and simmer for 10 minutes.
  • Add the corn, stir, and taste to adjust the seasoning to your liking.
  • Option to add the toppings, avocado, sour cream, jalapeno slices, and cilantro. Squeeze more lime.

WHAT TO SERVE IT WITH:

  • It’s best served with freshly made corn tortilla, bread, or even rice. For me, it’s a meal by itself and I don’t need anything else. 

HOW TO STORE IT:

  • If I’m freezing any type of soup, I individually portion them and then freeze them. I use some freezer bags or individual containers. They last for weeks. 

HOW CAN I MAKE IT VEGETARIAN:

  • Add more veggies like zucchini, cauliflower, squash, and different kinds of beans.
