Heat a soup pot with olive oil. Saute the onion for a minute or until tender and translucent. Continue sauteing, then add the garlic and cook until fragrant.
In a small bowl, combine taco seasoning, add to the pot and stir to combine. Stir in the bell pepper, black beans, cooked chicken, diced tomatoes, and chicken broth. Stir, lower the heat, cover, and simmer for 10 minutes.
Add the corn, stir, and taste to adjust the seasoning to your liking.
Option to add the toppings, avocado, sour cream, jalapeno slices, and cilantro. Squeeze more lime.
