Caramelized Onions and Peppers
Onions give such a great flavor when caramelized. Today I combined these amazing vegetables to create a waistline-friendly meal. This is part of my Bright Line Eating – for those of you who haven’t heard of BLE – it is a diet program. I know, I know – you’re probably saying – it’s another diet program that sure to fail. When I was in school for my certification to be a Health Coach – I thought I knew everything but I was baffled about cravings and emotional eating. Yes! We cover it in the class but it’s not like the way, Susan Pierce Thompson had explained it through her program. She talked about how sugar and flour are just like drugs that we can easily get addicted to. It makes sense because sugar and flour are refined – no nutrients. Sugar spikes our insulin that can cause inflammation and depletes the leptin in our brain. Leptin is our hormone that signals the brain when we are full, it signals satiety.
So, I decided to make this BLE friendly recipe.
Recipe
Ingredients
- 1 onion sliced
- 2 bell peppers seeded and sliced
- 1 cup mushrooms sliced
- 1 tablespoon low sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
- black pepper
Instructions
- Spray the pan with olive oil, heat and add the onion. Stirring frequently, cook until tender or caramelized. Set aside.
- In the same pan add the peppers and mushrooms, stir, cook until tender. Add 21 seasoning salute, soy sauce, vinegar, sesame oil, and black pepper, stir, cover, simmer for 2 minutes or until well heated. Remove from the heat. Sprinkle sesame seeds on top.
