Brownies

Chocolate is one of the most popular choices during Valentine’s Day! We’re a couple of days away and I thought I’ll make some brownies for a nice dessert after a lovely Valentine’s Dinner. One thing I learned from making anything from scratch, is that you are in control of the quality of ingredients for whatever you’re making.

what is the best way to melt the chocolate?

You can use a microwave or a double boiler. For the microwave, place the chocolate chips in a heat proof bowl, add the butter, microwave for 30 seconds. Stir after 30 seconds and place it back in the microwave in an increments of 10-15 seconds until the chocolate is melted and smooth. For the double boiler, fill a saucepan halfway with water, boil in medium heat. Place the chocolate chips in a heat proof or glass bowl, add the butter. Place the bowl on top of the saucepan, stirring the chocolate continously until melted and smooth.

  • Cake flour
  • Butter
  • Unsweetened cocoa powder
  • Eggs
  • Vanilla
  • Granulated sugar
  • Brown sugar
  • Instant coffee

tips for taking out the brownies from the pan

Line the 8×8 square pan with parchment paper. Cut the parchment paper longer than the sides of the pan, allow it to overhang. This way, when the brownies are done baking, it’s easier to lift the parchment and transfer the brownies onto a platter. Use a plastic knife to cut the brownies while it’s still hot. The plastic knife cut smoothly through the brownies.

Ingredients
  

  • 4 oz. chocolate bar, break into chunks
  • 1/2 cup butter, softened
  • water for the double boiler
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon instant coffee
  • 1/2 teaspoon sea salt
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup cake flour
  • 1 teaspoon pure vanilla
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350ºF. Lightly grease an 8×8 square pan. Line the pan with parchment paper, cut it where the two sides overhang.
  • Boil the water in the saucepan. Place a heatproof bowl on top of the saucepan. In the meantime, cut the chocolate bar into chunks. Add chocolate and butter to the heatproof bowl, keep stirring until melted and smooth.
  • Remove the melted chocolate from the heat, set it aside to cool for a little bit (do not let it hardened).
  • When the chocolate cooled, add sugar, eggs, instant coffee, and a pinch of salt, use a handheld mixer, mix until well combined. Add the unsweetened cocoa powder, mix until smooth, scrape the side of the bowl to make sure everything is well incorporated.
  • Add vanilla and flour, use a spatula to fold until the chocolate mixture is well combined. Add the chocolate chips, fold until well incorporated.
  • Pour the batter into the prepared pan. Bake for 15 minutes or until you can smell the brownies. Do not over bake.
