1cupold-fashioned oats,you can use the gluten free oats if you like
1cupblueberries
1/4cuppure maple syrup
3eggs
3very ripe bananas
1tablespooncoconut oil
1teaspoonbaking powder
1teaspoonvanilla extract
Instructions
Heat the oven to 350 degrees. Line a muffin pan with paper cups. Combine all ingredients except blueberries in a food processor. Process until smooth.
Transfer the mixture to a bowl and fold the blueberries. Scoop about 1/4 cup of the mixture into each muffin cups. Bake for 30-35 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
