Sweet Potato Chocolate Pudding
Coconut cream and sweet potato go hand and hand. The smooth texture of the pudding is very satisfying, this is an amazing way to tame your nagging sweet tooth. The orange sweet potato is high in carotenoids and full of other essential vitamins. It’s high in vitamin A, vitamin B, B6, thiamin, niacin, and riboflavin according to San Diego based nutritionist Laura Flores. Sweet potatoes are lower in calories than white potatoes, they are fat-free and lower in sodium, but they’re higher in natural sugar. I still prefer sweet potato than any other highly processed sweet treats.

Ingredients
- 2 cups sweet potato, cooked, mashed
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon cinnamon
- 2 tablespoons coconut oil, melted
- 1/4 cup pure maple syrup
- 1/2 cup coconut cream
- pinch of salt
Instructions
- Combine all ingredients in a blender. Blend until smooth. Cool and refrigerate for an hour before consuming.
