Sweet and Spicy Chili Sauce

Sweet, garlicky, spicy chili sauce. A perfect condiment to any of your main dishes. And it’s a delicious addition to your noodle stir-fry or soups.

ingredients for making chili sauce

  • CRISPY GARLIC – are fresh minced garlic cooked in oil. Keep an eye on the garlic when infusing the oil. As soon as the garlic turns ligh brown, remove from the heat. It will continue to cook. I like to strain the garlic from the hot oil to make sure I don’t burn them. Crispy garlic are great topping for any of your favorite dishes especially noodle stir-fry. 
  • ONION – is also an aromatic, the flavor is amazing when sauteed. 
  • PICKLED CHILI PEPPER – are bottled pickled pepper with natural flavorings. If you can’t find Pickled Chili Pepper, buy fresh chilis and finely chop them. Or use a food processor and pulse until finely chopped. Add 2 tablespoons of vinegar per one cup of chilis to substitute for the bottled pickled chilis. 
  • BROWN SUGAR – makes the chili sauce sweet. It also helps melow down the level of heat and balances the flavor of the chili sauce. 
  • HONEY – is a great addtion to the brown sugar that also makes the chili sauce sweet. It also renders an earthy flavor that compliments with the rest of the ingredients. 
  • SMOKED PAPRIKA – came from different dried chili peppers that were crushed and smoked under oak fire. This process gives the red powder a rich smoky flavor. I used this spice to make homemade Taco Mixed, Paella, and roasted veggies. It is great with seafood and grilled meat. Sometimes I make stews with smoked paprika that gives it a Southern flavor. It boost the flavor of this chili sauce. 
  • SOY SAUCE – I used light soy sauce. It lift up the flavor of the sauce that gives it an umami flavor. 
  • NUETRAL OIL – are oils that has high point heat, it means it doesn’t burn easily. Example are vegetable oil, canola oil, or peanut oil.

what can i use the chili sauce with

This chili sauce recipe is actually the same as chili oil. You can use it to dip your dumplings, to flavor your stir-fry noodles, pork chop, BBQ, and many more. You can also use it to flavor your fried fish, calamari, or shrimps.

Sweet and Spicy Chili Sauce (or chili oil)

A combination of crispy garlic, sauteed onion, and pickled chili pepper with smoked paprika and soy sauce. Added brown sugar and honey for sweetness. Great topping for any stir-fry dishes.

Equipment

  • Sauce pan
  • Spatula
  • Small Strainer
  • Bowls

Ingredients
  

  • 1/2 cup vegetable oil or canola oil
  • 10 garlic cloves or 1 whole head, about 4 tablespoons finely minced, divided
  • 1 teaspoon salt
  • 1/2 teaspoons smoked paprika
  • 1/4 cup soy sauce
  • 1 cup Pickled Chili Pepper or finely chopped fresh chilis
  • 1/3 cup brown sugar
  • 1 tablespoon honey
  • 2 teaspoons cornstarch, dissolved in 1 tablespoon of cold water

Instructions
 

  • In a saucepan, combine 3 tablespoons of garlic and oil. Cook the garlic until light brown. Immediately remove from the heat and strain the infused oil. Set aside the crispy garlic.
  • Use the same saucepan, heat the infused oil. Add the remaining garlic, saute until aromatic. Season with salt, add the smoked paprika, soy sauce, pickled chili pepper, brown sugar, and honey, stir to combine.
  • Add the slurry (dissolved cornstarch), stir, simmer until thickened. Top the chili sauce with crispy garlic.

Notes

  • If you’re using fresh chilis instead of the bottled pickled chili pepper, finely chop the fresh chilis and add 2 tablespoons of vinegar per 1 cup of chopped chilis. 
  • Crispy garlic is an amazing topping for your stir-fry dishes. I’d like to make extra for later use.
