Sunrise Roasted Potatoes and Peppers

There’s a variety of ways to cook potatoes aside from French Fries. I love roasting them with bell peppers, this recipe is so easy and full of flavor. Americans eat more potatoes than any other vegetable. More than one hundred varieties are available nationwide, while thousands are grown worldwide. Today the potato is the world’s most important root crop, according to the book The Vegetable Bible by Tricia Swanton.
