Shrimps and Snow Peas Stir Fry

Stir-frying is a great way to have dinner done in no time. This recipe is your go-to during busy weeknights. Perfectly seared shrimps with sweet and sour sauce. Combined with fresh crunchy snow peas.

I always use whatever we have left in our fridge and pantry. Today is that kind of day. Lately, it seems like every day is that kind of day. I’m using shrimps and when I stir-fry with shrimps or any type of seafood, I’d like to sear them first and then set them aside. I don’t add them to the rest of the ingredients right away because I’m afraid I’ll overcook them. The last thing you want is rubbery shrimps. I also bought a big bag of snow peas, so fresh and crunchy. Love it! 

Here’s what you need to make this recipe:

  • SHRIMPS – raw, peeled, and deveined
  • SNOW PEAS – snow peas are known as Chinese pea pods. They are often used in stir-frying. They are flatter and have premature peas. Whereas snap peas are more rounded, they have similar nutritional value, although snow peas are a little sweeter. 
  • AROMATICS – onion, garlic, and ginger
  • RED CHILI PEPPER – these are mild peppers and have a bright red color
  • FOR THE SAUCE – soy sauce, apple cider vinegar, oyster sauce, brown sugar, and cornstarch

Shrimps and Snow Peas Stir Fry

Equipment

  • Wok or wide pan
  • Bowls
  • knife
  • cutting board

Ingredients
  

  • 1/2 teaspoon salt
  • 1 pound raw shrimps, peeled and deveined
  • 2 tablespoons olive oil
  • 1 yellow onion, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon minced ginger
  • 1 red chili pepper, sliced
  • 2 cups fresh snow peas, trimmed

FOR THE SAUCE

  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons oyster sauce
  • 1 tablespoons brown sugar
  • 2 teaspoons cornstarch

Instructions
 

  • Season shrimps with salt. Heat the wok or wide pan with oil, add the shrimps, and cook until pink. Set them aside.
  • Use the same pan, add more oil if needed. Add the onion, and cook until tender. Add garlic, ginger, red chili pepper, and snow peas. Then saute for a minute or until the snow peas are a little tender but still crunchy.
  • Meantime, make the sauce. Combine all sauce ingredients, and stir until the sugar and cornstarch dissolve.
  • Add the shrimps back into the pan, and stir to combine. Add the sauce, and continue stirring until the sauce thickened. Remove from the heat, and serve with steamed rice.
