Pesto Chicken Pasta

You can add pesto in anything. Sometimes I even add it to my salads, it’s great on top of crostini but if you’re not a big fan of carbs just have some greens with chicken and add the pesto.

Recipe for the Pesto

Ingredients:

1 cup fresh Parmesan cheese

2 garlic cloves

1/2 cup cashews

1/2 cup pistachios

1 cup parsley

1 cup basil

1/2 cup olive oil

Instructions:

Add all ingredients in a food processor. Run the food processor and add the oil slowly through the mouth feed while processing until smooth, it’s ok if it’s a little chunky.

Recipe for the Chicken Pasta

Ingredients:

8 oz. uncooked pasta, you can use cavatappi or penne, cook according to the package.

8 oz. chicken breast, cut into thin sliced

Juice of one lemon

Zest of one lemon

1 onion, chopped

1/2 cup sun-dried tomatoes

1 teaspoon dried basil

2 tablespoons oil

salt and pepper to taste

Instructions

-1. Heat a pan with oil, sauté the onion until tender or translucent. Add dried basil, lemon, lemon zest, salt, and pepper, stir to combine.

-2. Add the chicken and stir, cook for 3-4 minutes or until it’s cooked through. Add sun-dried tomatoes and pasta, combine, then add the pesto.

-3. Stir well and make sure the pasta are all coated with pesto.
