Parsley and Basil Pesto

Pesto is a nice pairing with pasta, salad, and even crostini. But if you’re not a big fan of carbs just have it as a dip for your veggies. Pine-nuts are great to use for this recipe also.

Ingredients

1 cup fresh parsley

1 cup fresh basil

1/2 cup fresh Parmesan

2 garlic cloves

1/2 cup + 1 tablespoon olive oil

1/2 cup cashews

1/2 cup pistachios

salt and pepper to taste

Instructions

  • Combine all ingredients in a food processor except the oil. Run the food processor and slowly pour the oil in the mouth feed. Process until smooth, it’s ok if it’s a little bit chunky.
