My Chicken Adobo
I used an adobo spice from 360 Flavor & Spice Company. It’s a combination of different spices like ground coriander and garlic, annatto seeds, ground cumin, Mexican oregano, tellicherry pepper, kosher salt, and a hint of sugar. It brings an umami flavor to the dish, great for marinating chicken or any kind of meat.

Chicken Adobo
Very flavorful Chicken Adobo with a little twist of Mexican flavor.

Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 5 Bella mushrooms, cleaned, sliced, stems removed
- 1 bell pepper, deseed, cut into cubes
- 1 yellow onion, chopped
- 1/4 cup soy sauce
- 3 tablespoons olive oil
- 1 teaspoon Adobo Spice
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon red chili pepper flakes divided
- salt to taste
- cilantro for garnish
Instructions
- Season the chicken with salt and 1/4 teaspoon red chili pepper flakes, toss to coat. Heat a pan with oil, add the chicken cook for 3-4 minutes on each side or until golden brown.
- After the chicken browned, push them on one side of the pan, to make room for the rest of the veggies. Add more oil if needed. Add the onion, saute for 2 minutes or until tender. Add the mushrooms and bell pepper, stir to combine, cook until tender.
- Add adobo spice, paprika, garlic powder, and the remaining red chili pepper flakes. Add soy sauce, stir until well combined. Serve warm with steamed rice, garnish with cilantro.
